That’s what you’ll find in hundreds of books and thousands of articles about bread baking. Four simple ingredients manipulated in countless ways to make many kinds of traditional, artisanal, and practical breads.

But this can’t be the only way to make bread.

To me, bread is an idea. Not just the byproduct of mixing together four immutable ingredients, but a potentially endlessly customizable form factor – a three-dimensional flavor vehicle made out of trapped air bubbles. For too long has the flavor of bread been monopolized by wheat! This blog is an exploration into how it is possible to expand our definition and vision of what bread can be. Welcome to Avant Bread.
